Did you know that cheese is the oldest food created by Humanity? This was a discovery by pure luck during the Prehistoric time. Back then, its primary use was to prevent food shortage and famine. When the weather was too bad for fishing or hunting, there was no other choice than to find other food substitutes to avoid dying from starvation.
Initially, cheese was made of goat milk and lots of salt; the salt was there for taste of course, but also mainly for a preserving purpose. During the Ancient Greece period, cheese was an important part of dinner, mainly composed of dairy products and cheese, while the Roman Time prefered to cook it with olive, honey or red wine. They did have already a wide range of cheese : Parmesan cheese, pecorino, blue cheese, cheedar cheese. These are the ancestors of our current cheese, and the Romans even gave the current name 'cheese', 'Käse' in German, “Cacio” in Italian, which derives from the latin “Caseus”.
Later on, cheese was used as a currency and made its way to Europe. Funny enough, cheese being eaten with bread in France was randomly discovered by French emperor Charlemagne, who was visiting the countryside and stopped at a place, where the owner didn't have anything left apart from bread and blue cheese. Charlemagne loved the mix of them two and the rest is History. Well, at least in France.
